I absolutely love pancakes. I remember being younger and having them every weekend at my grandmothers along with bacon and maple syrup, and again when I was older having blueberry pancakes every Saturday morning at a local diner.
Regular pancakes taste amazing, and now I actually prefer this recipe over regular pancakes. With the use of the apple sauce, it’s so soft and airy!
- 1 banana
- 1/4cup ground oats
- 1 egg
- 30grams Vanilla Hexapro protein powder (1 scoop)
- 2 tbsp unsweetened apple sauce
- 1/2tbsp baking powder
- 1tbsp Enjoy Life chocolate chips
Blend oats in a bender or food processor until they reach a flour-like consistency, then add all the other ingredients EXCEPT chocolate chips and banana and blend until smooth.
Fold in 1/2T mini chocolate chips. Heat a pan on medium and spray with non-stick.
Spoon batter into the pan, and after allowing the pancakes to firm slightly, place sliced banana and sprinkle the remaining 1/2T mini chocolate chips on top.
Flip and cook through.
